Sablière is an Edinburgh drinks company producing alcohol-free sparkling cuvées at 0.0% ABV. The drinks are intended as an alternative to Champagne and other sparkling wines and are made at the company's own cuverie in Edinburgh.
Rather than taking the alcohol out of wine, Sablière builds its drinks from tea, fermented apple, honey, and verjus, using a production approach it calls Méthode Sablé. The range has two 750ml cuvées, a Blanc de Blancs and a Rosé, which are sold direct to customers online. The company also supplies bars, restaurants, hotels, and retailers, and its website names trade customers including The Caledonian and The Renaissance Club.
Sablière Ltd was incorporated in Scotland in April 2024. The business was developed by co-founders Lucy Isles and Kim Wilson. The company says its packaging is made from reused board and that it uses lightweight glass. In December 2025 Sablière won £100,000 in the Scottish Government-backed Pathways category of Scottish EDGE Round 26.
